A convection oven is very similar to a conventional oven, the main difference
being that the convection oven circulates the air around all the time, creating
more even baking (ostensibly) and usually shorter baking times.
Convection
ovens aren't at all like a microwave oven. Not suitable for heating a cup of
coffee or an herb pack. Use ceramic or metal or glass containers in a convection
oven.
If you are planning to buy a countertop convection oven, as in you're getting something
smallish to save counter space, they're probably all about the same.
